What I ate Wednesday.

For breakfast today I had oatmeal with maple sugar. I splurged and added some Brown sugar too.
For lunch I made a Red Lentil Dal  and had it over rice. This is a picture of what was left that I will have for lunch over the next few days. No cooking lunch for a while!

Dinner tonight is steamed butternut squash and pasta with a taste of butter  and some parmesan. 

Breakfast is ready for tomorrow too. I soaked 1/2 cup of quinoa today. I drained the water and covered the quinoa in my thermos with boiling water. In the morning it will be cooked and delicious!

Default Salad Recipe

This was our yummy lunch today. I call it the default salad because it is what we eat when I don’t have something else planned. I will share the recipe with you:)

Serves 4
Default Salad

1 head romaine, chopped
3 tomatoes, chopped
2 cups in season vegetable(we used asparagus from our garden!)
1/4 red onion, chopped
4 hard boiled eggs
4 small handfuls croutons (we like to make our own out of whole grain bread when we have time)
4 Tablespoons ground flax
4 Tablespoons raw sunflower seeds

Divide the ingredients between 4 different plates or large bowls and top with your favorite dressing.

The dressing I used is my Better Than Ranch with green onions that made it green:)

Better Than Ranch
1 T. White wine vinegar
1 T. Lemon juice
1 1/2 T. Nama Shoyu or Liquid Amino or soy sauce
1 Clove garlic
2 Green onions or sliver of red or sweet onion
1 t. Mustard
1/2 cup vegenaise or mayonnaise or almondaise
1/2 c. Sunflower seeds
1/2 c. Water or almond milk
When blended pulse in:
1 T. Fresh parsley
1 T.  Fresh Chopped chives

Grind the nuts and add the rest to be blended together.
I used a cheap version of a magic bullet to make the dressing and it worked great.

Planting 4 Weeks Before Last Spring Frost

These are the seeds you can start now(April 9th) if your last frost date is in 4 weeks. Our last frost date here in Erda is around May 3-9 depending on who you talk to. The state extension even has varying dates on the internet.
If you didn’t start your onions from seed a few months ago, your onions won’t get big bulbs if you plant them now but you could eat the greens still. If you want bulb onions then plant onion sets which are onions that someone already started for you. You can buy them at a home improvement store or a nursery.
Everything else can be planted as seeds.

Spring Spinach

This spinach came up this year from last year’s roots! I was outside cleaning up beds and getting them ready to plant in when I saw these full grown/ready to eat spinach plants.

Have you ever tasted spinach that has been through a frost? It’s like sugar! Sweet crunchy goodness first thing in the spring is a gardener and whole food eaters dream:) It is too cold for the moisture in the beds to be used up by the plants or to evaporate, so I don’t have to water or fertilize. Just eat. The plants won’t grow super fast in the cold but they were a surprise I’ll take any day.

January Arugula

This is the first winter garden I have ever had and look at this lovely Arugula!  It was so fun to harvest this in the greenhouse today.
I planted the unheated greenhouse in the middle of November. The plants have been growing really slowly in the cold temps, but they have been growing! It has been about 30 degrees warmer in the greenhouse than outside. I have 55 gallon drums painted black and filled with water inside the greenhouse that absorb the heat from the sun during the day and heat the greenhouse at night. I talked with another greenhouse enthusiast who said her heating bills went down 40% by using barrels like mine. I learned it from my Dad who did the same thing on a smaller scale with black 5 gallon buckets under a plastic wrapped PVC frame to keep our tomatoes warm in Wyoming when I was younger.
This warmer weather we have had here in Fort Collins  lately has really sped up the growth of the greenhouse plants. We have been opening the doors when it gets above 70 degrees in the greenhouse to get good ventilation to the plants which keeps disease down and makes for healthy plants.
Another cool thing about this Arugula is that it was grown in a soilless mixture of sand and sawdust! I have been feeding the plants with a micronutrient mix to give it more nutrients than are available in our widespread depleted soils these days.  It is like doing hydroponics in soil. Organic and nourishing to the max. Yum!
These two bags of Arugula are sold to two lucky people today. 🙂
